Food Fun: Cheesy Broccoli Bites

CHILDREN LOVE TO COOK – Broccoli BitesBroccoli Bites

Children love to cook. It’s creative and there’s something tasty to eat at the end of it. As you cook, chat about healthy eating and home-cooked food, and introduce simple mathematics as you weigh and count the ingredients out.  These cheesy broccoli bites are simple to make and very tasty too.

1 broccoli, broken into florets
100g cheddar cheese
10 cheesy crackers, such as Ritz
1 free range (Bumpkins!) egg

• Pre-heat the oven to 180oC
• Weigh and count out your ingredients, involving your child in the process
• Spray a mini-muffin tin with olive oil spray
• Boil the broccoli florets in boiling water for 4 minutes
• Add the cooked broccoli, cheese, crackers and an egg into a food processor, blitzing until well combined
• Spoon the mixture into a mixing bowl, encouraging your child to give the mixture a final stir before spooning the mixture into the prepared muffin tin
• Bake in the oven for 12-15 minutes until the mixture is fully cooked
• Allow to cool to room temperature and enjoy this healthy snack
