Healthy Baked Vegetable Bites
It’s important to make sure your child has a healthy balanced diet as it has a positive impact on your child’s physical and mental health and wellbeing. This recipe is for some tasty vegetable bites that your child can get involved with.
Ingredients:
• 340g uncooked or frozen broccoli
• 1 large egg
• 35g onion
• 45g cheddar cheese
• 85g breadcrumbs
• 2 tablespoons parsley
• Pinch of black pepper
1. Preheat the oven to 200oC. Grease a baking sheet with a thin layer of oil or line with parchment paper.
2. Put the broccoli in boiling water for 1 minute then remove and plunge in a bowl of ice cold water. Drain well.
3. Chop the broccoli finely and mix with the egg, onions, cheddar, breadcrumbs and seasoning. Scoop 2 tablespoons of mix and using your hands gently press between your hands to shape. Wash your hands between every few bites to prevent from sticking. Next place the bites onto a baking sheet.
4. Bake for 18-20 minutes turning halfway, until golden brown and crispy. Enjoy with your favourite dipping sauce.
